Beppino Occelli butter is made with sweet centrifuged cream skimmed from strictly Italian milk. With centrifuging, butter is produced directly from fresh milk: first, the milk is subjected to several filtration processes, then centrifuged at low temperatures and at a very high spin speed, which allows the fat to separate from the skimmed milk. Unlike the skimming process, centrifuging produces a "sweet" cream, meaning it is not acidic, as it has not undergone fermentation. The hand-crafting of the blocks using wooden molds makes the butter not only delicious to eat but also beautiful to look at.
