Beppino Occelli's original recipe calls for butter to be processed with the addition of chunks of summer truffle in absolutely extraordinary quantities (6%), completely excluding any artificial flavorings. Excellent in pasta dishes, fondues, and pâtés, "Butter with Summer Truffle" can be simply spread on toasted bread for a delicious appetizer, or curled over classic fried eggs before serving.
