LOSA DI CAPRA

A cheese made from raw cow's and goat's milk, the quantities of which vary depending on seasonal availability. It has a low, square shape with a knot formed by the cloth in which the curd is wrapped. Soft and yielding in texture, it has a milky, buttery aroma. Its shape and color are reminiscent of losa, a stone that covers mountain homes. It pairs well with medium-bodied red wines and fragrant honeys. Beppino Occelli also recommends it for fillings and fondues.
